Kimera Pet-Nat, Blanco y Rosado 2021: Two of the exceptional wines produced by Gonzalo Celayeta, our Garnacha master, whose mission is to show the versatility of the Garnacha grape—and these wines are prime examples. The grapes for both wines are sourced from the mountains around San Martín de Unx in Navarra, at an altitude of 600 meters. The clay-limestone soils here provide good acidity and concentrated flavors thanks to the limestone. Both wines are made with a single fermentation using the ancestral method: before the fermentation finishes, the wine is bottled, allowing it to complete its fermentation in the bottle, creating the bubbles we love. The wines then spend 10 months on the lees, developing nutty and creamy flavors. Both are disgorged to remove residues, resulting in a clean, translucent wine.
- The Blanco (only 1,500 bottles produced) is made from 100% Garnacha Blanca, offering freshness and delicate flavors.
- The Rosado is made from 80% Garnacha Tinta and 20% Garnacha Blanca. The combination creates a fruit-forward wine thanks to the red Garnacha, with precise acidity from the Garnacha Blanca. Only 700 bottles were produced.
Can Descregut, Memoria 2018: A member of the prestigious sparkling wine association Corpinnat, Can Descregut focuses on traditional method sparkling wines. Memoria is their flagship wine, sourced from two of their highest vineyards in the mountains of Penedès. This classic blend of Xarel-lo and Macabeu is aged for a year before undergoing a second fermentation in the bottle in 2019, where it then spends a minimum of 5 years on the lees before being disgorged. The result is a creamy, complex, and nutty wine that pairs great with almost any dish.
Both winemakers work with minimal intervention to ensure the fullest expression of their terroir, honoring their traditions.
