The Kimera family introduces its third member, a sparkling rosado (or pink) wine, masterfully blended from red and white Garnacha. This ambitious endeavor by Gonzalo Celayeta and Luis Moya showcases Garnacha's untapped potential for sparkling wine, a variety rarely utilized for this purpose. Gonzalo meticulously manages the ripeness of the grapes, selecting the harvest date with precision to balance acidity and fully develop the flavors. The addition of Garnacha Blanca, known for its higher acidity, complements the lower-acid red variety.

Crafted using the ancestral method, the wine undergoes a single in-bottle fermentation to achieve its effervescence. This complex process required considerable effort from Gonzalo and Luis, resulting in a limited production of just 700 bottles. Despite the challenges and need for additional equipment, their determination and skill produced an expressive and versatile wine.

While ancestral method wines often present as unfiltered and cloudy, this wine breaks the mold with its clear, beautiful pink color. Its palette features rich undertones of red cherry, strawberries, and raspberries, without being syrupy. Skillfully made, it unveils yet another facet of the Garnacha profile.
