A passion-driven addition to the Kimera line, this collaboration between Gonzalo Celayeta and Luis Moya takes form in an ancestral sparkling wine made from white Garnacha from Navarra. Embracing the ancestral method, where fermentation occurs only once in the bottle, they have stayed true to their artisanal winemaking practices, with a firm belief that this technique best reflects the Navarra terroir. The result is a wine that's clean, without sediment, effervescent, and full of life. Aromas of pear, lemon, and salinity burst forth, while the creaminess of the lees adds complexity on the palate.

Creating this wine presented a substantial challenge for Gonzalo and Luis. Working with minimal resources, they faced the complexities of sparkling wine production. Despite the artisanal conditions, the result was outstanding: a clean, complex wine that's both easy to drink and enjoy. As with any top-quality sparkling wine, it can be savored on its own or proves exceptionally versatile when paired with food. Enjoy it with a well-curated cheese board featuring nutty, hard, and delicate buttery cheeses; seafood and cured meats are also prime choices to accompany this lively wine. Only 1,500 bottles produced.
