La Voz del Viñador is a rare and expressive white wine made from 100% Albarín Blanco, a native grape of León, Spain. This 2021 vintage is produced in extremely limited quantities (just 660 bottles), and showcases Noelia de Paz’s bold approach to winemaking: minimal intervention, oxidative aging, and a desire to give voice to the vineyard. Bottled as a Vino de Mesa "sin DO," this is a deeply personal interpretation of what Albarín can become in the hands of an innovative vintner.
Vineyard & Viticulture:
The grapes come from high-elevation vineyards (750 m) in Villamañán, southeast of León. The continental climate, with hot summers and cold winters, plus strong diurnal shifts, helps produce thick-skinned, aromatic grapes. Soils are calcareous with rounded pebbles, offering good drainage and water retention. Farming is organic and dry-farmed, with traditional goblet-trained vines. No mechanical work is used; everything is done by hand to preserve terroir and vine health.
Winemaking:
Hand-harvested Albarín grapes are destemmed, gently pressed, and fermented with native yeasts at low temperatures in stainless steel tanks. Post-fermentation, the wine is aged oxidatively in used French oak barrels (400–500 L), which are only partially filled to encourage flor yeast development. It spends 12 months on the fine lees without stirring, gaining structure, saline depth, and complexity. Bottled unfined and unfiltered with minimal sulfur, the result is a mature yet vibrant white with tropical fruit notes, dry finish, and savory elegance.
