Originating from a single 54-year-old vineyard (El Tòfol), this single-variety Macabeo wine stands out distinctly. While Macabeo typically finds its role in blends, especially in Rioja where it goes by the name Viura, El Tòfol showcases the grape's standalone brilliance. The Gramona cousins champion this wine as a testament to Macabeo's complexity, derived from an exceptional vineyard farmed organically and with low yields for concentrated grape flavors.

The vines were planted in 1969, a prized possession of the Gramona family. At an elevation of 250 meters, the vineyard benefits from cooler temperatures, ensuring grape acidity is preserved in an otherwise warm environment. Nestled in calcareous clay soils, the vines are not irrigated, experiencing constant drought stress every year.

Spontaneous fermentation using native yeasts occurs in stainless steel tanks. This is followed by a 9-month aging period in 500-liter oak barrels of varying ages. The wine is then bottled unfiltered and unclarified, with a limited production of just 2500 bottles.

On pouring, El Tòfol presents itself as a light wine, perfect for an aperitif. It is effortlessly enjoyable, whether savored solo or paired with subtle dishes. The bouquet reveals hints of mandarin, beeswax, and golden apple. On the palate, its light body is complemented by pronounced acidity, mineral undertones, and notes of ripe yellow apples and mountain herbs. This wine delicately unveils its multifaceted layers with every sip.
