Consuelo, made from the Albillo grape, demonstrates Alfredo's ability to harness the warmth of the Duero Valley, producing a white wine that balances depth with drinkability. This wine is a blend of vineyards dotted along the Duero River, each bringing distinct nuances due to their varying altitudes (ranging from 770 to 1000 meters), soils, and orientations.

The vines, some tracing back to 1891 while the youngest come from 1910, are notable for their age. Older vines tend to yield fewer grapes, but the juice they produce is concentrated in flavor. To capture these flavors, Alfredo lets the juice macerate with the grapes during the 7-day fermentation process, a method that adds both texture and complexity to the wine. After fermentation, the wine finds its home in used French oak barriques for 12 months, allowing it to settle and mature.

In the glass, Consuelo offers a multifaceted profile, both rich and well-structured, making it a go-to wine for hearty rice dishes, whether it's a flavorful seafood paella or a creamy mushroom risotto. Its acidity ensures it holds its own against robust flavors, seamlessly complementing them.
