La Asperilla stands as one of Alfredo's crown jewels and is the only single-vineyard selection from his collection that we currently feature at Nativo. Originating from a storied vineyard in his hometown of Peñafiel, these vines, planted in 1932, serve as proof to the challenging and arid climate of Castilla y Leon.
Situated 750 meters above sea level, the vineyard's elevation helps the grapes retain their essential acidity. Alfredo's approach to viticulture is minimalistic, abstaining from herbicides, pesticides, or any systemic treatments. Even more noteworthy is his decision to forego irrigation, even during the most severe droughts. This commitment provides a transparent window into the vineyard’s unique terroir and the nuances each vintage presents.
Reflecting its age, the vineyard houses a mix of grape varieties. While 80% of the wine is derived from Tinto Fino (Tempranillo), the remaining 20% incorporates white grapes like Palomino, Moscatel, and Albillo, which enhance the wine's freshness.
Upon hand harvesting, the grapes are transported to the winery. There, half of them are destemmed. Spontaneous fermentation is facilitated by native yeast from the vineyard. After a brief 15-day period of maceration and fermentation, the wine is moved to 500-liter French oak barriques to undergo malolactic fermentation. After resting for 12 months, during which the solids settle, the wine is carefully transferred to stainless-steel tanks for final aging. Notably, the wine remains unfiltered throughout this process. This meticulous approach results in a limited production of just 1,000 bottles.
La Asperilla's robust profile pairs best with hearty dishes, particularly beef and lamb. The incorporation of spices complements the wine's multifaceted nature. While it's inviting in its youth, La Asperilla also benefits from prolonged aging, provided it's stored in a cool, dark environment.
