La Cosa — The Thing, Alfredo Maestro’s only sweet wine, emerges from Segovia’s vineyards, where grapes are dried for two months, developing noble rot and intense flavors. Crafted with minimal intervention, the slow fermentation yields a rich, balanced wine with expressive aromas of dried fruits and flowers.

La Cosa — The Thing, is the only sweet wine produced by Alfredo Maestro. A creative project that, through the effort and creativity of Alfredo and the resilience of the vines, results in one of the most delicious and fun sweet wines we have tried.

The grapes are sourced from the province of Segovia, where they are brought to the winery at the end of October to be dried for two months. During this time, the grapes acquire noble rot, which adds even more complexity to the wine.

The grapes are then pressed, yielding very little juice but with very concentrated flavor. As with all of Alfredo’s wines, it is made with very low intervention, without using any cultivated yeasts for the vinification. The fermentation is very slow, as the yeast struggles through the dense sugar, and it naturally stops at 9% ABV.

The wine is dense, as if flavor itself had some heavy weight, yet it is surprisingly well-balanced by solid acidity. Expressive and aromatic, with dried apricots, peach jam, and dried flowers coming to mind.
